The Merlot for this wine originates from the farm and was picked early in the ripening cycle from a South facing block – ensuring optimal berry aromas to shine through in the wine while maintaining good acidity and freshness. The Sauvignon Blanc component is also found on the property. These grapes are from 3-year old vines. Chenin and Cinsaut were sourced from Darling. All wines were made in our cellars separately and blended together at the final stage. The red varietals were pressed at a constant 10 °C and are left in contact with the skins for a period of 2-3 hours. Cultured yeast was used with parsimony in the fermentation of the red varietals. The whites fermented naturally.
Soft pink in color, this wine has intense strawberry flavours backed by tart and uplifting citrus. The wine shows great structure with fresh acidity and lingering after taste. This wine is perfect to drink on its own as an aperitif or together with an al fresco luncheon.
This wine will work very well with light, summery flavours such as salads, fish and white meats. We recommend a chilled glass as an aperitif.
